I had elk steaks for the semi first time last week. Striploins on the kamado. Now I just need to get a draw to try to get my own. Delicious

progress report?

She was a quick n dirty roast that kicked ass. Prime Rib rub slapped on a coat of yellow mustard . Set the smoker to full throttle, full water tray, hickory chips, and my new favorite weapon - The Meater temp probe targeting a 150 internal. Took about 2.5 hours on smoke then gave it 45 min rest wrapped up in a cooler.
Juicy when hot last night and effin delicious for lunch today!

meater probes are on my list of things I need to get my greasy hands on.

Chuck roasts are awesome done like a brisket up to 200ish as well.

Meater probe is on my list. My bluetooth inkbird with corded probes would only last a couple rotations with the rotisserie hahaha

It’s awesome. The only thing to be aware of is that with a fully enclosed steel box smoker (AKA a Faraday Cage) the bluetooth range to your phone is about 10 feet. No idea how much range the meater+ version adds.

One other pro tip - you need the tip of the probe to poke through your foil wrap to monitor the rest phase. 👍

I went to a Indian restaurant in Kamloops and ordered a lamb dish last week.

And the waitress asked how spicy i wanted it, i said real spicy.

Anyways it was a lil spicier than i could handle lol


So good on the stomach burning sauce for a while.

That habanero sauce has some kick though.

I just put a few drops in to compliment another sauce. In moderation it’s good.

I will grab some! One of my favorite memories from Jamaica was this dude who had a jerk chicken stand on the beach at the resort. Became a daily ritual to find that delicious fawker! Also did result in a little ring sting depending on how the sauce was mixed that day. LOL.
