Yup. We stayed at the Sandals resort in Jamaica and they had a you can eat jerk chicken cabana. So good. Good thing the food was good because the weather was horrible. Seen one sunset in 7 days. One good thing about crappy weather is afternoon delight is a lot easier to convince the misses into when it’s pouring rain.I will grab some! One of my favorite memories from Jamaica was this dude who had a jerk chicken stand on the beach at the resort. Became a daily ritual to find that delicious fawker! Also did result in a little ring sting depending on how the sauce was mixed that day. LOL.

There were no quantities so I used my discretion. Added some heat with some powdered rub but pretty much used what Dan has in the picture. Added a little more pancake syrup to the left over marinade in the bowl and rolled the cooked pieces around and let them rest for a few minutes before serving.
