Tim, that looks great! What more could a guy ask for; fresh moose meat, onions, mushrooms, fresh beans with garlic....looks delicious. To hell with the "plating techniques". That's a man's meal right there!!

What the recipe for the red wine sauce? I tried a port wine sauce for mallard duck beast and it was great.

I used The Housemakers Wine, merlot. Only reason why I used that is because my son just bought his first house and it was a gift from the Realtor.
Next time, I’d use a bit less butter.

That sounds like the recipe I used only more ingredients. I used port wine, beef stock, and butter. I will add onions next time. Try this an see if you like it.
