First brisket on the Pit Boss. Turned out great. A little well done. Caesar salad and twice baked garlic potatoes. Saskatoon pie with French Vanilla ice cream for dessert.

Another one that’s a easy thing to do that people really like are the rub potatoes. Cover them in olive oil and put your favourite rub on them then cook them on the bbq or smoker. I cook extras and then you can hollow them out and make a filling and do some potato skins for the next day.
Those are really good. Did some with just salt and pepper. Good

I just bought a new Pit Boss vertical smoker. I'm looking forward to firing it up soon. There are a lot of good ideas in this thread. Lets keep it going! Now I just have to find time to get it put together and moved onto the deck!

Butterfly shrimp. Very large.
Twice baked potatoes......Thanks Doug, the first time we tried.
Marinated chicken.

Turn out wonderful on a standard BBQ.

Two small pork tenderloin on the Pit Boss (Competition pellets) for an hour and finished off on the Weber. This one (left over from the night before) was warmed in the oven. Garden fresh kale Caesar salad, garden radishes, and garlic/ginger fried rice.

To spatchcock or butterfly chicken means to split a whole chicken by removing its backbone so that it is flattened. You can ask your butcher to do this for you, but it really is easy enough to butterfly a chicken yourself.
