Helped buckie with his bull elk this am. Went good. Just finished cleaning and packaging heart and liver. Some for trapline bait, some to eat. Gonna fry up some heart when mama and son get back from swim club.

Fried heart is awesome. Also, stuffed is pretty good. Regular turkey/chicken dressing and baked is great.

Wife stuffed a moose heart couple years ago, she didn’t trim any ventricles or grey skin or anything, just stuffed it lol needless to say it didn’t get eaten. Lol

Was never a fan of heart, not sure why.

I clean it up in such a way that you wouldn’t be able to tell until you taste it. Even then its not nearly as poignant as liver when cooked right. I slice it up thin and dip it in flour/paprika/garlic powder/salt and pepper then into a hot frying pan with 2-3 tbsp of oil. About 2 minutes per side, serve hot and immediately. My youngest daughter Hope loves it the most.
