Spiced it up and let it marinate for 3 hours. It has been charred all around and is now sitting in a small roasting pan (with a little water in the bottom to get the juices for some gravy) to reach 130 degrees.
An hour and a half for that roast. One side was 139 degrees and the other was 130 degrees. Should be awesome.
Rare and medium rare slices should keep everyone happy.
