I would recommend a medium priced one; not the cheapest nor the bestest! You can always upgrade if you fall in love and use it a lot. The medium priced one will hold its value for resale.
Look for full suspension and in the mountain bike format and not the street bike format.
I am very happy that I bought mine from a bike shop and not CT or Costco. The technicians and their knowledge is great to have access to.

That is a lot of bottle picking
If it gets used it's worth the money. My $150 bike I bought last year is not comfortable to ride and hangs in the garage. If I can find an ebike that's comfortable and is a decent price point I'd probably jump on it. No desire to ride the bike I have now so maybe the ebike would help me get motivated?

BTW, look for an "air adjustable seat post". You would love it!
