I am new to smoking meats and fish. So far I have done two batches of salmon with good results. I was wondering if a guy should use a different smoker for jerky, my buddy says I can have his old one too, so I would have two. I would hate to make a batch of deer jerky and it have a fishy taste. Please share recipes, tips and experiences herethis is a unit my other buddy gave me when he got a new one. It has two burners and gets nice and hot. The other one offered to me is identical and housed in an insulated box as well, but only has one burner and I believe has only done jerky and sausage... Thanks in advance for your input, Holio

not a smoker but for jerky i have got away from the smoker and went to a dehydrator (bought 3 at crappy tire for $55 each) and just adding liquid smoke to my meat during the seasoning process, i have found with the dehydrator their is alot less baby sitting and alot more consistant, i move my racks around every couple hrs and done deal.

I have found some smoked meats to be very smokey tasting, maybe be too much, I was also wondering about the dehydrators also, good info.
Bud had converted an old fridge, worked good, don't think he cleaned it between fish or meat! Maybe try it with smaller quantities to see

I do both fish and game in the same smoker and can't say I've ever noticed a fishy taste on my game or vice versa not yet anyways, I've seen a few fridges converted kind of a great idea IMO can do alot of meat at once if I get lucky with and elk in the next few days might have to build one

Several years ago my dad converted a old time ice box type fridge ( ice block on the bottom with a separate smaller door on the bottom ) and just added a single burner hot plate. The chrome grates and steel porcelin or enamel ( I think ) internal walls worked well. You could open the door and add chips without letting the heat and smoke out.

Bringing this thread back up.

I have a pile of apple wood in my yard and long with different kinds of mountain ash and other woods.

I have never done any smoking before, so I'd like some advice on an entry level smoker(just to see if I like doing it, without spending a ton of $$$).
What kind and where did you buy it? I know I could fab up my own, but would like to start with a "plug ad play" so to speak.

Can I burn my own wood chips in a Treager, or do I have to buy theirs?

Like I said, I have an over abundance of wood in my yard

Traeger!!!!!!!!!!!!!!!!!!!!!!!! I've got some Elk Meatballs on the Traeger as we speak. Just finished up slicing up some Elk for Jerky, and it's in my Brine right now.. smoke it tomorrow morning, then I'll pop on my Turkey. I am Traeger Obsessed now!!!!! Absolutely Loving our Traeger, and we became a dealer here in Creston. I never thought I'd be one of those people who talk about food... but I am now lol. I don't use my oven in the house.. I call it my peasant oven. Everything on the Traeger including the bread I make. It's awesome!!

We have a Traeger also. Work fantastic.

I have a Big green Egg and find it lot more versatile then a Traeger . Any Kamado grill works awesome and can use your own wood for smoking . Use charcoal to heat then apply wood to smoke

I have a Bradley, love the unit and it works well. It sucks that you have to use their pucks as I have access to lots of maple, Apple and some cherry chips.
