OK! Who's gots the best halibut recipe?

I acquired approximately 15 pounds of halibut.

Thinking of grilling, baking, and some good ol' fish'n'chips.

Anyone have any good recipes?

Learnt this from my Alaskan friends.


Cut into pieces 1" thick by 4-5" long.

Heat peanut oil to deep frying temp

Dip into tempura batter ( follow tempura direction)

Dip into Panko crumbs

Deep fry for a couple mins

Sprinkle with lemon pepper

Mmmmmmmmmmmmm

Easier and better for your health.Fillet into thinner chunks.Spread on a baking sheet[oiled]Dice up some mushrooms and tomatoes and spread over the fish top it with a coating of grated chedder cheese.Bake @ 400 for about 20 mins and enjoy.Less messy than deep frying as well.

I've cooked a lot of halibut over the years and learned one important thing early on. Cook it with high heat (400-500 F), very quickly. If I'm battering and deep frying halibut, hot oil and approx. 3 minutes. In a 450 degree oven, 7-10 minutes depending on the thickness of the fish. It is a very lean fish and will dry out quickly if overcooked.

Hey guys I am a chef and well simple is better hot sear pan. Salt on the halibut oil in pan fish in pan sear then in the over flip and back in the oven untill tender enjoy.

1" to 1 3/8" filet on sesame oil on foil
mix up the topping - cream cheese - lemon juice - celantro - sea salt - pepper
cover filet to 3/4" thick of topping
grill for 14 minutes +/-

Same way we make our walleye... 2 eggs and a little milk.. mix together. Take saltine crackers and use a rolling pin to make them into a "dust". Mix seasoning such as lawry's season salt in the crackers or the egg mix, fry in HOT oil.

Had another recipe for on the grille that was on wood planks that was amazing, will get that from the car club member that cooks it for us once a year.

Going to Alaska in a couple weeks and bringing home a ton of halibut and salmon, so gonna watch this thread for sure!!!

All of the above sound good! Halibut is VERY easy to overcook and dries out as per High Velocity.
We have good luck with cooking it still partly frozen. Better control over not over cooking.
