Pork rib roast on the Pit Boss for a little smoke before final cooking on the Weber.

You ask, why do you use the two BBQ’s?
Sometimes the Pit Boss is just for smoking as the heat is a little inconsistent for cooking. I have the small Pit Boss and there is only one fire pit and that end is way hotter than the other.
