I asked a dietician about the fat content of deep fried turkey, and the good news is.........the bird sears fast at the high temperature (325-350 degrees) and does not absorb a lot more fat. When a bird is roasted, you baste it with the drippings, and make gravy from the fat, which is also absorbed by dressing if you stuff the cavity. She felt that it was reasonable to have a deep fried bird once in a while, without a heaping helping of guilt.

My friends enjoy the birds I fry, but for me the turkey is just an excuse to make onion rings. Use Crusteez pancake mix, according to the regular directions, and mix in sliced onion rings. FABULOUS!!

Sounds like our crew is heading that way as well... 8 of us anyways ( with kids this time!), and doing a bird in the fryer too. Is there a lot of gravel on the way to camping/staging area??
