Traditional clutchs use plastic buttons to slide along the helix. Roller clutches use a roller, thus less friction, more consistant travel, and quicker response.

Button require replacment often; roller lasts much longer.

I prefer Team roller clutches. Really need to know what you are riding to make a good recommendation on clutch make and helix type.

The helix opens and closes the secondary clutch in conjuction with the secondary spring. Angles on the helix control upshift and backshift speed and response time. This explanation is very simplified. Both clutches and their combined parts all work together, against each other, and in conjuction with each other. Kind of like a helicopter; ten thousand loosely connected parts flying in perfect unison.

If you have some mechanical understanding and good referance is Olaf Aaen's Clutch Tuning Handbook. Google will find it.

Good explaination by Garryese.
Roller secondary is what you want Helix selecton is a science by its self. It changes the upshift and downshift characteristics based on how much power is required by the track. There is set angle helix (31 deg or 25 deg etc,) or multi angle helix. The helix you decide on depends on the other cluthing componnets and what you want the machine to do ( Grass drags to high marking in the mountains ). Stock helix covers the wideest range of driving habits. You need to try a few setup to find the helix you like the best.
