New Years Chili

In a six quart pot you need:

2lbs. lean ground beef or road kill
1lb. Italian sausage sliced thin
2 lrg. onions
2-3 garlic cloves diced
2 cups mushrooms
2 cans corn
2 cups diced green red orange peppers
4-6 cans kidney beans, garbonzo beans, black beans or whatever kind of beans you like (no human beans)
6-8 tablespoons chili powder
salt and pepper or any other spices to taste
2-3 bottles mesquite or hickory flavoured BBQ sauce
3/4 cup molasses
1/4 cup instant coffee
1/2 bottle liquid smoke
enough hot sauce for your taste
? cans of tomatos crushed diced. mix it up what ever you prefer.

cook the ground kill and sausage, saute onions, mushrooms, garlic and peppers
add mixture to sauce pot along with all other ingredients except the liquid smoke
add tomato mixture to fill rest of pot and throw in a live muskrat. when muskrat quits stirring the pot, ITS DONE!
about a half hour brfore its to be served add the liquid smoke to the pot.
if mixture is too thick add beer to thin if mixture is too thin add tomato paste and corn starch to thicken up.

Swap the coffee for a tablespoon or so of cocoa powder, you won't be dissapointed

Don't do the liquid smoke and bbq sauce! please for the love of your family...


How about equal parts beans to diced tomatoes and chili powder to cumin.

And 50/50 ground beef to ground hot Italian sausage meat.

How about equal parts beans to diced tomatoes and chili powder to cumin.

And 50/50 ground beef to ground hot Italian sausage meat.

Chopped chuck steak instead of Ground beef makes a world of difference as well...

4 Ancho Chilis

1 tbsp cocoa powder
2lb chuck steak cut into 1/2" cubes
1 large onion, diced
5 cloves garlic, minced
2 yellow peppers 1/4" dice
3tbsp canola oil
1 28 oz can plum tomatoes
2 bottles beer
1 16 oz can black beans
1 16 oz can red kidney beans
1 16 oz can pinto beans
2 tbsp lime juice
3 tbsp brown sugar
1 bunch cilantro stemmed and chopped


Preheat oven to 250
Seed and stem chilis, bake for 10 min
cool chilis and grind in food processor or coffee grinder. reserve
in dry pan toast cumin seeds, allow to cool then grind in coffee grinder. reserve
season beef with salt, saute over medium high heat in 1 tbsp of oil. reserve
in large heavy pot over med high heat add 2 tbsp of oil, saute onion, yellow peppers and garlic for 5 min.
add chilis cumin and oregano and cocoa and stir for 2 min.
add beef and tomatoes and beer to pot. simmer for 20 min.
Add beans, lime juice, sugar simmer for 5 minutes
adjust seasoning (Salt , Pepper)
add cilantro simmer for 5 more minutes then serve.
Delicious with shredded cheddar on top......

Hope this is not joke ... it's good!! Copied it, saved it ... sounds good...I have to make lunch at a family trip to Fernie this year...they are so getting this Chili !!!

We make it at the firehall, no joke..

You can leave out muskrat and we use rookie to stir...

I see others have added good ideas to..

I made this recipe yesterday and it turned out well. Not as HOT as expected so I added 4 large Jalapeño peppers which bumped it up a notch. Thanks Summiteer :beer: :beer:
