Just like pork/hog, trichinosis is the biggest concern. 160F minimum internal temp to kill it. Some newer studies say 137F but I steer closer to the 160 mark.Doesn’t look to bad. I’ve heard you have to cook it well done to kill the bacteria/parasite. Some say in a crockpot.
