I believe the water pump is lubricated by a larger line directly from the oil tank into the block. Maybe the seals leaking and coolant is migrating through that lubrication port into the tank.
Start with fuel delivery if a half choke saves it. Pull your carbs and check bowls for water/crud.
It will idle smooth? If it does then check your mains and needle position. Also I believe those carbs had fuel screws not air screws so check those. Find some stock carb specs for that year and...
Does it completely stall as in dies or does it just do the stutter like you have a bad dess key? Did you plug the wire into the dess key after you put plastics back on? How about new plugs with proper gap?
That came from a big log. I milled a 12x for a beam for my basement on my cabin. Needed it 20’ long. Started with a 34” fir to get down to a straight 20’ 12x12. You don’t really see how crooked a log is over 20’ till you put it on the mill. Looked perfectly straight on the tractor forks
And they probably conveniently forgot to tell you that only the diesel was able to drive home after the test. The rest couldn’t make it to the next charging station cause they burnt all there battery power up in the tow challenge.
